Last Spring we had the pleasure of checking out One Cut of the Dead at the International Horror and Sci-Fi Film Festival at the recommendation of the Festival Director, Monte Yazzie. We were not disappointed! It was such a fun and unexpected movie! Fast forward to now and it is finally on Shudder (none of these posts are sponsored, we just really love Shudder!). We thought it would be a lot of fun to create a recipe for this movie, so we came up with the idea for Onigiri Brains!
In One Cut of the Dead, “while shooting a low-budget zombie film in an abandoned warehouse, the crew find themselves caught between actual zombies and a mad director who won’t stop rolling. Filmmaker Shinichiro Ueda turns the film on its head more than once for one of the wildest, funniest, and most surprising zombie movies of all time.”
The theming for our Onigiri Brains is pretty obvious. With One Cut of the Dead being a Japanese zombie movie, we went for a Japanese snack. Onigiri seemed a good fit because they can be easily shaped with a mold. We purchased a brain mold on Amazon and while it didn’t get all the details, it nailed the shape! Salmon for the filling and salmon furikake for the outside give the onigiri a nice pink color (not to mention, salmon is delicious). The result is a silly yet delicious snack!

Inspired by the Shudder debut of One Cut of the Dead, The Geeks have come up with a fun and tasty recipe for Onigiri Brains!
Ingredients
- 6 cups cooked Short Grain Sticky Rice (warm)
- 1 can Salmon
- 1 1/2 tbsp Kewpie Mayonnaise
- Salmon Furikake
Instructions
- Open and drain salmon.
- Mix salmon and mayo in a small bowl.
- Set aside.
- If you are using a brain mold, line it with plastic wrap.
- Wet your hands or spoon and scoop rice into the mold filling it about halfway. (You may need to wet your hands/spoon more several times to prevent sticking)
- Taking another spoon, spoon about a tablespoon of salmon filling.
- Wetting your hands/spoon again top with more rice.
- Press your onigiri into the mold a bit more to get the right shape.
- On a parchment lined plate, turn your mold over and carefully pull out the onigiri.
- Cut a shallow line on the top to make the brain shape.
- Wet your hands and moisten the tops of the brains.
- Sprinkle with furikake.
- Serve.
