When it comes to craft cocktails, there are a lot of places in the Valley that we could recommend. Heck, there are several that we love! The Beverly, however, holds a soft spot in our heart. Basically, The Beverly is our version of Cheers. The bartenders typically remember your name and more importantly what you like to drink and during the weekend the sound of live music can be heard through out the whole bar. The cocktails at The Beverly are always superb. While there may be drinks on the menu that aren’t for you, there are no bad drinks. Speaking of drinks, we were able to try some of the spring cocktails in the works at The Beverly. (Please note: these drinks may be changed or removed from the new menu.)
The first drink we tried off of the new menu was a tequila cocktail created by Stevie and Chris. The drink features: tequila, Boy Drinks World Serrano Cocktail Spice (bitters), Cynar, Cherry Puree (which is actually more like a syrup), and egg white. This cocktail will become a quick favorite, and will convert the people who swear they don’t like tequila. It is rich but not cloyingly sweet. The egg whites in this cocktail create a silky smooth texture. Speaking of egg whites, we asked bartender Stevie if she had any tips for using egg whites in cocktails and she told us that while most bartenders and mixologists will recommend a dry shake first for about ten seconds followed by a shake with ice, they find that adding a few ice cubes during the dry shake and double straining creates a better foam and texture.
Following the tequila cocktail we tried The Beverly’s interpretation of a shandy, also created by Stevie and Chris. This features: bourbon, lemon, kiwi shrub (made in-house by Shrub Sensei Stevie), white balsamic infused with cara cara orange and vanilla (also made in house), and Session IPA. This drink was crazy good (totally professional opinion there)! Beer cocktails are so hit or miss but The Beverly truly hit the nail on the head with this drink. It is very refreshing and balanced. One might assume the vanilla would over power the drink but it does the opposite. Always the geeks we are, we asked Stevie for any tidbits she might be able to share about shrubs (sweetened vinegar-based syrup, from which the cocktail is made; the syrup is also known as drinking vinegar) and she told us that when it comes to shrubs, the longer they sit the better they taste.
The last drink we tried was conceived by Gavin and Chris. It is their take on an Aperol Spritz and is made with: strawberry infused Aperol (made in-house), rhubarb bitters, lemon, juice, prosecco, and strawberry liqueur. This drink is a interesting take on strawberries and champagne. Nice and refreshing, this will be a great drink for people who love bubbles or want a lighter cocktail. The rhubarb bitters provide a unique and tart twist to drink you’d expect to be super sweet. Unfortunately, Gavin was not working when we tried his cocktail recipe, but if you ever happen to be in while he is working, ask him about his home garden. Gavin loves to use home grown and fresh ingredients in his cocktails and we love to pick his brain for ideas.
If these drinks and the past cocktail menus are any indication, the new spring menu at The Beverly is going to be amazing! The bartenders are immensely talented and creative. We happened to get another sneak peek at a cocktail Tony was working on after we shot the photos for this write up and let us tell you, you’re not going to want to miss it. The new menu should be ready any time so keep your eyes peeled!
