Last week was my birthday week! With everything going on, we weren’t able to do what we normally do for our birthdays (Matthew’s birthday is 11 days after mine). Normally, we go to Disneyland. Instead, this year we decided to have a Disneyland weekend at home. We whipped up various recipes to enjoy in the comfort of our home including this Downtown Disney copycat recipe for La Brea Bakery’s Fresh Mozzarella Sandwich that we’ve created.
So why did this sandwich get included in our weekend menu? It doesn’t look particularly, Disney. However, this sandwich is a must-have during all of our Disneyland trips. Most of the evenings we are in the park we are usually trying to get in rides while people eat or watch the evening shows. That means we usually miss dinner in the park. Instead, at least once during our trip we will stop by La Brea Bakery Express in the Downtown Disney District and grab sandwiches to-go.
We have really been missing these sandwiches along with the other foods we love from the park. Imagine our surprise and excitement when we realized we could get La Brea Bakery Demi Baguettes locally! We knew we needed to recreate our favorite sandwich of theirs, the Fresh Mozzarella Sandwich. Add some mozzarella, sun-dried tomatoes, fresh basil, and pesto, then you have yourself a delicious and easy piece of the Downtown Disney District to enjoy at home.

Inspired by one of their favorite sandwiches in Disneyland's Downtown Disney District, The Geeks have recreated La Brea Bakery Express' Fresh Mozzarella Sandwich!
Ingredients
- 1 La Brea Bakery Demi Baguette
- 3 oz Sliced Mozzarella (we used Belgioso brand)
- 1 oz Sun Dried Tomatoes
- 1 cup Fresh Basil
- 1 tbsp Basil Pesto
Instructions
- Slice baguette in half lengthwise.
- Spread pesto on the top half of the baguette.
- On the bottom half place your fresh basil, next top with the mozzarella, and then with sun dried tomatoes.
- Place the top half of the baguette.
- Enjoy!
